Mt. Fuji is reopening today in its newly designed 3,600-square-foot Breckenridge Village space behind the former Greenhaw’s Men’s Wear in the same building as the Loony Bin Comedy Club.
When the announcement was made in May 2022 that Breckenridge Village had been purchased and would be undergoing a multi-million dollar renovation featuring several new restaurants, many wondered what the fate would be of Mt. Fuji, a longtime tenant of the shopping center, which was opened in 1986 by Emiko Biggin and husband Bruce Biggin.
After working and training in Japanese restaurants in Dallas, brothers Aaron Shota Jackson and Yusuke Jackson purchased Mt. Fuji in August 2022. The Jackson brothers grew up in Little Rock and remember doing their homework in Mt. Fuji while their mother Fusae waited tables. She worked as a server there for nearly a decade.
A press release from last year said the new owners planned to keep many of the items Mt. Fuji is known for while continuing to drive the cuisine forward based on their previous experience and travels. The reviews have been positive.
Aaron and Yusuke were working at the old location when the March 31 tornado hit the shopping center. Both of their cars were totaled, and the restaurant was closed for about six weeks while the roof was repaired and HVAC units were replaced.

Mt. Fuji will be open for lunch and dinner on Wednesday. Its hours are 11 a.m.-2 p.m. and 5-9:30 p.m. Tue.-Thu.; 11 a.m.-2 p.m. and 5-10 p.m. Fri.-Sat.; 5-9:30 p.m. Sun.
